MUSTARD CHICKEN WITH TOMATOES 
1/2 c. mayonnaise
5 tsp. Dijon mustard
1 tbsp. red wine vinegar
Salt & pepper
3 tbsp. oil
1 cooked chicken, already baked
2 tbsp. chopped parsley

Combine mayonnaise, mustard and 3 tablespoons water. Combine vinegar, 1/2 teaspoon salt, 1/8 teaspoon pepper and oil. Remove skin from chicken and quarter. Arrange chicken on platter. Slice tomatoes (thin) and place around chicken on platter. Coat chicken with mustard sauce and sprinkle with parsley. Pour your favorite dressing over tomatoes.
