MAINE BLUEBERRY CAKE 
2 eggs
1 tsp. vanilla
1 c. sugar
1 c. all purpose flour
1 tsp. baking powder
1/4 tsp. salt
1/2 c. hot milk
1 tbsp. butter
3/4 c. blueberries

Beat eggs and vanilla until thick. Add sugar a little at a time, beating thoroughly. Sift together the flour, baking powder, and salt and stir in. Heat the milk with butter until butter melts. Stir this into first mixture and beat one minute until smooth. Pour batter into 8 x 8 inch pan, greased and cover batter with blueberries. Sprinkle over it, 1/4 cup sugar, mixed with 1/2 teaspoon cinnamon and bake at 375 degrees for about 25 minutes. Serve hot with ice cream or Cool Whip.
