HULUPKIA (PIGS IN THE BLANKET) | |
2 heads cabbage 2 1/2 lbs. beef and pork, ground 3/4 lb. rice, parboiled 1 whole onion, chopped, sauteed in sm. amount of oil 1 can tomato soup Salt & pepper to taste Cut core out of cabbage. Put in large pan of boiling water. Turn the head in the water and as they cook, peel the leaves off layer by layer and put in bowl of cold water. Cut the hard spine off the leaves to make it possible to roll. Combine meat, sauteed onion, parcooked rice, salt and pepper. Mix thoroughly. Roll inside a cabbage leaf and push in the ends to seal. In roasting pan, put small amount of oil, line with cabbage leaves. Put in the cabbage rolls. Cover with more leaves. Mix tomato soup with water and pour over. There should be about two inches of liquid. Cover with roasting pan lid and bake for 2 hours at 350 degrees. Serve with Baba's potato salad. Yields 12 servings. |
