CAKE-LIKE MEATLOAF 
2 lb. lean ground beef
1/2 c. tomato juice
1 egg (or egg beaters equivalent)
3/4 c. crushed melba toast
3/4 pkg. Lipton's onion soup
1/2 c. ketchup
3 tbsp. warm water

Mix all ingredients together. Form a loaf and bake 60 minutes in a 325 degree oven.

This is the best meatloaf I've ever had and misplaced the recipe. It is a lighter version of the classic meatloaf. I like to cook in a rectangular meatloaf pan which has the non stick lifter. The original recipe called for cooking in a tubular pan to form the shape of a cake.
