MEDITERRANEAN SALAD 
4-6 lg. tomatoes, cut into chunks
1 peeled cucumber, cut into chunks
1 can pitted black olives
1 purple onion, cut into rings
1/2 - 3/4 c. fresh chopped cilantro
Salt & pepper to taste
1 - 1 1/2 c. Blue cheese salad dressing
Grated Parmesan cheese

Toss together all ingredients except cheese. Chill no longer than 1 hour before serving. Serve on bed of lettuce. Top with Parmesan cheese. Variation: Toss with vinaigrette instead of Blue cheese and top with grated Mozzarella.
