SUNFLOWER SEED COOKIES 
1 c. butter
1 c. sugar
1 c. brown sugar
2 eggs
1 tsp. vanilla
1 1/2 c. flour
3/4 tsp. salt (use 1/4 tsp. if using salted sunflower seeds)
3 c. rolled oats
1 tsp. baking soda
1 c. sunflower seeds
1 c. coconut (optional)

Thoroughly cream together butter and the sugars. Add the eggs and vanilla and beat well. Add the flour, salt, soda, and oats. Mix thoroughly, then gently blend in the seeds and coconut.

Drop by spoonfuls onto ungreased cookie sheet at 350 degrees for 10 minutes or until lightly browned. OR, form into long rolls 1 1/2-inches in diameter. Wrap in waxed paper and chill. Slice 1/4-inch thick and cook on ungreased cookie sheet at 350 degrees for 10 minutes.
