HORSERADISH BEEF SALAD 
6 c. sliced boiled beef brisket
2 c. blanched celery, sliced
1 c. blanched onion, sliced
4 (4 1/2 oz.) jars sliced mushrooms, drained
2 tsp. sugar
2 tsp. salt
1 c. mayonnaise
1 c. sour cream
1/2 c. prepared horseradish
2 tbsp. chopped pimiento
2 tbsp. Worcestershire sauce
1 tsp. pepper
Salad greens for garnish

In large bowl combine beef, celery, onion and mushrooms. Combine sugar, salt, mayonnaise, sour cream, horseradish, pimiento, Worcestershire sauce and pepper. Blend well. Pour into beef mixture and toss well. Chill until serving time. Mound on platter lined with salad greens and garnish with sliced cucumber and cherry tomatoes if desired. Makes 20 servings.
