FRESH STRAWBERRY OR PEACH PIE | |
1 1/3 c. sugar 1/3 c. cornstarch 1 1/2 c. cold water Pinch of salt Red or yellow food coloring 1 tbsp. strawberry gelatin for strawberry 1 tbsp. peach gelatin for peach 1 tbsp. lemon juice Mix sugar, cornstarch and salt in a heavy saucepan. Gradually add the cold water until dry ingredients are dissolved. Add 4-5 drops food coloring. Cook until thick and clear. If too thick add water. Add gelatin and lemon juice. Cook and stir for about 2-3 minutes longer. Chill in refrigerator. Mix with washed and drained fruit. Put in a cool, baked pie shell. Keep refrigerated until served. |
