MUSHROOM QUICHE 
1/4 c. (1/2 stick) butter
3 tbsp. chopped onions
1 lb. fresh mushrooms, sliced thin
3 tbsp. fresh lemon juice
salt and pepper, to taste
1 tsp. all-purpose flour
1 c. milk
1 c. whipping cream
4 eggs, beaten
1 (9-inch) frozen deep dish pie shell, pre-baked
3/4 c. grated sharp cheese

Preheat oven to 400°F. Melt butter in skillet. Cook onions 5 minutes. Add sliced mushrooms and lemon juice. Season with salt and pepper. Cover and cook until tender, about 8 minutes. uncover and cook until liquid is evaporated, about 7 minutes. Put flour in bowl and whisk in milk. Stir in cream and eggs. Add mushrooms. Pour into baked pie crust. Lower oven temp to 350°F and bake for 35 minutes or until set.
