SOUTHERN FRIED CHICKEN 
Chicken - any amount to fry
Cast iron skillet or electric frying pan
Cooking oil (or melted shortening)
Flour, salt, and pepper

Pour in 1/2 inch or 1 inch oil in a skillet and put on medium heat. Mix the flour, salt and pepper in a bowl. Coat chicken in the flour mixture.

Place in hot oil; cover and cook 10-15 minutes. Turn pieces, cover and cook 10-15 minutes longer. For crisp chicken, remove the lid and fry a few minutes more. Drain and serve.
