WORKING MOTHER'S QUICK & EASY
CHICKEN
 
4-5 breaded chicken patties
3 tbsp. cooking oil
1/2 c. onion, chopped in lg. pieces
1/2 c. bell pepper, chopped in lg. pieces
1 can cream of chicken soup
1/4-1/2 c. milk
1/2 c. Velveeta cheese, cubed
Seasoning salt, salt & pepper to taste

Brown chicken in oil. Add onion and bell pepper. Continue cooking slowly while making sauce.

Heat soup, milk and cheese in saucepan until smooth. Add soup mixture to chicken. Turn heat down and simmer 15-20 minutes. Serve over hot noodles or rice. Serves 4-5.

May substitute skinless chicken breasts, lite cream of chicken soup, lowfat milk and lite Velveeta for a lowfat and low calorie dish.
