ELEGANT TRIFLE 
1 c. sugar
2 tbsp. cornstarch
2 c. milk
2 eggs
3 layers sponge cake baked to fit trifle bowl

Mix sugar and cornstarch in a double boiler; gradually stir in 2 cups milk. Cook in top of double boiler approximately 15 minutes, stirring constantly. Separate two eggs. Slightly beat the egg yolks in a small bowl, then pour part of the hot mixture into the egg yolks and mix well. Then pour all the egg mixture back into the double boiler with the milk mixture and cook 5 minutes longer, stirring constantly. When mixture thickens, remove from heat and stir in vanilla.

Place one sponge cake layer in bottom of trifle bowl, then add pudding and fruit. Alternate strawberries, bananas, pineapple, and peaches with cake and pudding.

Substitutions: Tea cakes or vanilla wafers for cake. Use only bananas for banana pudding or one kind of fruit you prefer.
