UPSTATE MINESTRONE SOUP | |
1 lb. sausage (kielbasa) 1 can Great Northern beans 1 tbsp. vegetable oil 1 c. chopped onion 1 c. sliced carrots 1 tsp. sweet basil 2 sm. zucchini, sliced 1 (14 1/2 oz.) can tomatoes with juice 2 cans beef bouillon 2 c. shredded cabbage Slice sausage 1/2 inch thick; brown in oil. Add onion, carrots and basil; cook 5 minutes. Add zucchini, tomatoes with liquid, bouillon and cabbage. Bring soup to a boil; simmer for 1 hour. Add beans; cook for 20 minutes. |
