CHEESE - ASPARAGUS SOUP 
1 tbsp. butter
1 tbsp. all-purpose flour
2 c. milk
1 c. cut cooked asparagus
1 tsp. salt
Dash of white pepper
3/4 c. shredded cheddar cheese

Melt butter; blend in flour and cook until bubbly. Gradually add milk, stirring until well blended. Cook over low heat, stirring constantly, until smooth and thickened. Add asparagus and seasonings. Mix well. Add cheese; stir until cheese is melted. Yield: 4 servings.
