HOLIDAY PUMPKIN SOUP
This is a fun holiday soup that has been in my family for my entire life. I promise you the whole family will enjoy it!!!

1 cup chopped celery
1 cup chopped onion
4 potatoes, peeled and boiled
1 (32 oz.) box chicken broth (4 cups)
1/2 tsp. nutmeg
1 tbsp. salt (add more to taste)
1 cup half & half
1 (16 oz.) can pumpkin
1/2 cup (1 stick) butter

SUGGESTED TOPPINGS:

2 cups cheddar cheese
1 cup chopped green onions
1 cup salted sunflower seeds
3 cups butter popcorn, popped
2 cups gold fish crackers
2 cups fresh fried bacon, broken into pieces

In a large pot take butter and cook celery and onions until onions are clear. Mash up the boiled potatoes and add with the chicken broth. Stir in nutmeg, salt, half & half and pumpkin. Add more salt to taste. Can be served after soup is completely heated.

All toppings are placed in bowls and added by individuals based on individual taste. Adding ALL of the toppings together is the the best option and what makes this recipe so fun and interestingly tasty with every bite!

Enjoy!!
