RICE PUDDING 
2 c. water
1/2 c. uncooked rice
2 tbsp. cornstarch
1 1/4 c. skim or 1% milk
1 tsp. vanilla
6 grams (5 packets) Equal
1/4 tsp. salt (optional)
1/4 c. raisins

Add salt to water and bring to a boil. Stir in rice and raisins. Return to boil. Reduce heat and simmer for 30 minutes, stirring a couple of times. Mix cornstarch and milk. Add slowly to rice mixture. Mix well. Continue stirring over low heat until mixture thickens. Remove from heat. Add vanilla and Equal. Refrigerate until cold. Garnish.
