GREEN TOMATO PICKLE 
7 lb. green tomatoes, sliced
3 c. lime
2 gallons water
3 pt. vinegar
2 tbsp. pickling spice (in bag)

Soak tomatoes in water mixed with lime for 24 hours; drain and wash well. Cover with water - change water every hour for 4 hours; drain well - Heat vinegar, sugar and pickling spice; pour over tomatoes - soak 24 hours or overnight - cook for 1 hour - Put in clean jars and seal. Yields 6 pints.
