CARROT CAKE 
2 c. self-rising flour
1 tsp. baking soda
1 1/4 c. Wesson oil
3 c. grated carrots
2 c. sugar
1 tsp. cinnamon
4 eggs

Mix flour, sugar, soda and cinnamon together in large mixing bowl. Then add oil, eggs and carrots.

Bake in two 9-inch cake pans at 350°F about 30 or 35 minutes. Cool and frost.

Carrot Cake Frosting:

1 (8 oz.) pkg. cream cheese
1 c. chopped pecans
2 tbsp. vanilla
1 box powdered sugar
1 stick butter

Mix all ingredients together and spread on cake.
