COCONUT CREAM FROSTING 
1 c. coconut, toasted and cooled
3 oz. pkg. cream cheese
1/4 c. butter
3 c. sifted powdered sugar
1 tbsp. milk
1/2 tsp. vanilla

Toast coconut and cool. Cream butter with cream cheese; alternately add sifted powdered sugar, milk and vanilla. Beat until smooth. Add half the coconut. Frost cake. Top with rest of coconut.
