POTATO CELERY SOUP 
4 c. potatoes, peeled & cut in 1/2 inch cubes
1 c. celery, diced
2 c. water
1/2 c. onion, chopped
3 cubes chicken bouillon
2 1/2 c. milk
5 tbsp. butter
Chopped parsley
Salt & pepper to taste

Combine potatoes, celery, onion, water, bouillon cubes, salt and pepper in saucepan. Cook over moderate heat until vegetables are tender, about 15 minutes. Most of the water will be absorbed. Add milk and butter. Heat and serve. Garnish with parsley, if desired. Serves 5 to 6.
