MYRTLE'S DRESSING | |
1 hen, salted and peppered to taste 2 c. medium ground corn meal 2 c. buttermilk 3 eggs 1 tsp. baking soda 1 tsp. salt 2 boiled eggs, chopped 1 c. onion, chopped 1 c. celery, chopped 12 saltine crackers 2 tbsp. butter Boil hen until tender. Mix next 5 ingredients together. Cook in oven at 350°F until done. Cool. Crumble bread and crackers together. Pour chicken broth over them and let set 10 to 15 minutes. Mix well. Add eggs. Cook onion and celery in 2 tablespoons butter and 1/2 cup water. Add to bread mixture. If more liquid is needed, add canned chicken broth to desired consistency. Add desired amount of finely cut hen. Bake in large dish at 350°F for 20 to 30 minutes. |
