ITALIAN CHUCK ROAST 
2 1/2 lb. 7-bone chuck roast
1 tsp. salt
1/4 c. chopped parsley
1 tbsp. minced garlic
2 tbsp. Worcestershire sauce
1 med. onion, sliced
3 stalks celery
2 strips bacon

Pierce meat every 2 inches with knife. Press inserts with mixture of salt, parsley, and garlic. Pour Worcestershire sauce over, and brown on both sides in hot skillet. Place in baking pan and top with sliced onion, celery, and bacon strips. Add 2 tablespoons water and bake, covered tightly, at 450 degrees for 50 minutes. Roast will create its own liquid. Uncover and bake 1- more minutes. Serves 6.
