MACARONI AND CHEESE 
3/4 lb. Cheddar cheese, shredded
2 1/2 c. macaroni, cooked
2 tbsp. onion, minced

WHITE SAUCE:

2 c. milk, scalded
2 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
1/2 tsp. pepper

TO MAKE WHITE SAUCE: Melt butter, whisk in flour, salt and pepper, over medium high heat, whisk in scalded milk until mixture thickens. Remove from heat.

To assemble casserole: In a 2-quart casserole dish, layer half the cooked macaroni, then half the cheese. Sprinkle with 1 tablespoon minced onion and salt and pepper. Repeat layers. Pour white sauce over macaroni and cheese layers, then dot with butter.

Bake covered at 350 degrees for 30 minutes, 15 minutes uncovered. Feeds 4 or 1 hungry graduate student.
