SHEILA'S CHICKEN SALAD 
4 lg. roasting chicken breasts, roasted, skinned, boned and cubed
Mayonnaise to moisten
1 1/2 tsp. prepared mustard
1 or 2 tsp. old bay seasoning
Salt and pepper
3 or 4 tbsp. minced onion
1 c. honey roasted peanuts
1 c. raisins

Mix first 5 ingredients. Should have 1/4 pound chicken meat per person. All this can be made as much as a day ahead. The last three ingredients should only be added about 1 hour or less before serving.

Taste for seasoning and correct.
