SHRIMP IN WINE SAUCE 
3/4 lb. shrimp, cleaned and shelled (raw)
1 tsp. flour
1/2 tsp. salt
1/4 freshly ground pepper
1 tsp. butter
1/2 c. dry white wine
1 tsp. hot water
1 tsp. tomato paste
1 minced scallion
Minced parsley

Toss shrimp in flour seasoned with salt and pepper. Melt butter and saute shrimp about 2 minutes on each side. Combine wine, water, tomato paste, and scallion; mix into shrimp. Cook over low heat about 5 minutes. Sprinkle with parsley. Serve with rice. Serves 2.
