PANCAKES FROM SCRATCH 
1 egg
1 c. flour
3/4 c. milk
2 tbsp. butter
1 tbsp. sugar
3 tsp. baking powder
1/2 tsp. salt

Mix all ingredients together. Can be mixed in blender.

Perfect easy recipe for a weekend cook like myself. We like them light, so I didn't cut down on baking powder. I did reduce sugar by half. Most important - film skillet or grill with canola. Consider making small silver dollar pancakes using just a tablespoon or less batter. Really, try this recipe!

Hi Holly,

Next time, don't throw it out - add a little flour if the batter is too thin, or a little water or milk if the batter is too thick. Batter recipes usually have to be adjusted to the correct consistency. Some flour absorbs more or less water than other flours do.

We are 16 and somewhere along the way, our pancakes turned into elephant ears. They came out pretty thick and we only made three. They were so thick, they were not cooked properly. And quite salty. If we had followed the recipe, we're sure it would have turned out nicely!
