RASPBERRY VELVET PIE 
Try this with strawberries or blueberries depending on taste and holiday. Just match jello flavor with chosen berries.

RED LAYER:

1 (3 oz.) pkg. raspberry jello
1 (10 oz.) pkg. frozen raspberries (unsweetened)
1 cup boiling water
1/2 tsp. lemon juice

Mix jello well into boiling water. Add lemon juice and frozen berries. Allow to gel just until it drops/plops from spoon.

WHITE LAYER:

1 (8 oz.) pkg. cream cheese, softened
1/2 cup confectioners' sugar
1 tsp vanilla
1 cup whipped topping (Cool Whip)

Blend cream cheese and confectioners' sugar well. Fold in vanilla and whipped topping.

ASSEMBLY:

prepared pie shell (pastry, graham cracker or chocolate cookie crumbs)

Layer into your choice pie shell starting with white layer. End with red layer on top and decorate with remaining white layer.
