8 boneless, skinless chicken breasts 1 1/2 bunches green onions, chopped 8 oz. mushrooms, sliced 1/2 c. parsley, chopped 1 tbsp. chopped garlic (jar) 2 c. chicken broth 1/2 can cream of mushroom soup 4 oz. Marsala wine 12 fresh basil leaves, chopped 1 lg. red Bell pepper, sliced 1 stick butter Flour 4 tbsp. lemon juice 1 tsp. Cajun seasoning 1/2 tsp. J.D.'s Vegetable Magic Salt & pepper to taste Sprinkle chicken with Cajun seasoning and flour generously. In a large frying pan, melt butter and saute chicken breasts until lightly brown. Remove from pan and set aside. Saute green onions and garlic in butter until tender, add mushrooms, parsley, chicken broth and soup and simmer for 5 minutes. Add wine, basil, Bell pepper, lemon juice, Cajun seasoning, vegetable magic, salt and pepper. Stir to blend well. Add chicken to pan and simmer for 20 to 25 minutes covered. Serve with rice. |
