BANANA NUT BREAD
3 very ripe bananas
2 eggs
1/2 c. butter
1 1/2 tbsp. buttermilk or sour cream
1 tsp. fresh lemon juice
1 c. granulated sugar
2 c. all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 c. chopped walnuts or pecans
1/2 tsp. allspice

Place bananas, eggs, butter, buttermilk or sour cream, lemon juice and sugar into a blender container or work bowl of food processor, fitted with steel blade. Whirl until smooth.

In a bowl, mix together flour, baking powder, baking soda and allspice.

Pour banana mixture over flour mixture. Stir just until flour is moistened. Stir in the nuts.

Turn into greased 9-by-4-inch bread loaf pan or into two 3-by-7-inch bread pans.

Bake at 350 degrees for 55 to 65 minutes or until bread tests done when a skewer is inserted in the center.

Allow to cool 5 minutes in pan, then turn out onto wire racks and complete cooling. Yields 18 to 20 slices.
