GINGER RICE 
1 c. UNCLE BEN'S® converted rice
2 tsp. olive oil
2 tbsp. green onions, thinly sliced
1/2 tsp. minced garlic
1 tsp. grated fresh ginger
1/4 c. diced carrots
2 tbsp. soy sauce
1 tbsp. coriander (seems a lot to me)

Cook rice as directed on package - omitting butter and salt. Heat olive oil, add green onions, garlic, ginger and carrots. Saute lightly. Stir soy sauce and coriander into hot rice. Add vegetable mixture. Makes 6 servings.
