BLUEBERRY MUFFINS 
2 1/2 c. sifted flour
2 1/2 tsp. baking powder
1 c. sugar
1/4 tsp. salt
1 tsp. vanilla
1 c. buttermilk
2 eggs, beat together
1 stick butter, melted
1 1/2 c. blueberries

Sift all dry ingredients together. Make a well in the center, add milk, butter, vanilla and eggs. Mix well starting from center. Add blueberries. Bake at 400 degrees in well greased tins or use foil cup cake liners. Add one egg additional (total 5) if recipe is doubled.

Makes 18 muffins.
