CHOCOLATE POTATO FUDGE 
2 med. potatoes, peeled & cut up
1-2 tbsp. milk
1 (16 oz.) pkg. semi-sweet chocolate chips
1 c. peanut butter (either chunky or creamy)
1 tsp. vanilla
3-4 c. powdered sugar
1/2 c. chopped peanuts

Cook potatoes, covered in boiled, salted water for 25 minutes. Drain water off and mash potatoes with milk to make fluffy. Set aside.

In heavy saucepan, heat chocolate chips over low heat until melted, stirring constantly. Remove from heat and stir in potatoes, peanut butter and vanilla. Stir in 3 cups of powdered sugar, working in with your hands if necessary. (You may need to add more powdered sugar if the mixture is not thick enough.) Stir in half the peanuts. Put the mixture into a greased 9 x 9 inch baking pan. Press down evenly. Sprinkle with remaining peanuts, pressing lightly into fudge. Cover and chill until firm.
