BANANA NUT BREAD | |
1 1/2 c. sifted all purpose flour 2 tsp. baking powder 1/2 tsp. salt 1/2 c. white sugar 3/4 c. quick or old fashioned uncooked Mother's Oats 1/3 c. vegetable oil 2 eggs, beaten 1/3 c. buttermilk 2/3 c. mashed bananas 1/2 c. chopped nut meats Sift together flour, baking powder, soda, salt and sugar into a bowl. Stir in oats. Add remaining ingredients, stir only until dry ingredients are moistened. Pour batter into a greased loaf pan (8 1/2" x 4 1/2" x 2 1/2"). Bake in a preheated moderate oven, 350 degrees, for 55 to 60 minutes. Cool on a wire rack. After bread is thoroughly cooled, wrap and store one day before slicing. Makes 1 loaf. |
