MUSHROOM CASSEROLE 
2 lb. fresh mushrooms (saute with 4 tbsp. butter & 4 tbsp. lemon juice)
1 c. Parmesan cheese
1 1/2 tbsp. minced onion

Place sauteed mushrooms in pan and sprinkle with Parmesan cheese and minced onion.

In bowl combine: 8 eggs 4 tbsp. flour 1 tsp. salt 1 tsp. pepper

Mix well and pour over mushrooms. Sprinkle with soft bread crumbs. Bake at 375 degrees for 25 minutes or until knife comes clean.
