OATMEAL - PECAN COOKIES 
1 1/4 c. butter
1 c. brown sugar
1/2 c. sugar
2 eggs
1 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
1 1/4 c. flour
3 c. oatmeal
1 c. pecans

Cream butter and sugars until fluffy. Add eggs and vanilla; beat well. Stir in soda, salt and flour; mix well. Fold in oatmeal and pecans. Bake at 350 degrees for 8-10 minutes.

Variations: Add 1 (12 ounce) package semi-sweet chocolate pieces or 1 (12 ounce) package butterscotch pieces or 1 cup coconut.
