CHICKEN CACCIATORE | |
2-3 lbs. cut up chicken 1 chopped onion 1 chopped green pepper 1 tsp. salt 1/2 tsp. pepper 1 minced garlic clove 1 can mushroom slices 1 tsp. oregano 1 tsp. basil 1/2 tsp. sugar 1 can chopped, crushed tomatoes 1 can tomato paste Saute onion and green pepper in oil in large frying pan for 5 minutes. Remove and put aside. Sprinkle chicken with salt and pepper; brown in oil and garlic. Return onion and peppers to pan. Add tomatoes, paste, mushrooms, oregano, basil, and sugar. Cover, simmer 40-60 minutes. Serve with spaghetti. |
