VEGETABLE FRITTATA 
2 tbsp. butter
1 thinly sliced sm. onion
4 asparagus tips, sliced
Salt and pepper to taste
3 mushrooms, sliced
1/2 zucchini thinly sliced
6 eggs, beaten

Place butter and onions in 8 inch quiche dish. Cook on high 3 1/2 to 4 1/2 minutes in microwave. Add asparagus, mushrooms, and zucchini. Cook on high 4 to 4 1/2 minutes. Stir once. Add eggs, season with salt and pepper and cook until set.

Since microwave ovens vary in power, you may need to adjust your cooking time.
