BARBECUE FRIED CHICKEN | |
2 1/2-3 lb. broiler fryer chicken, cut up 1/4 c. flour 2 tbsp. cooking oil 1/2 c. chopped onion 1 clove garlic, minced 3 tbsp. lemon juice 2 tsp. salt 1 c. catsup 1/2 c. water 1/4 tsp. pepper Combine flour and 1 teaspoon of salt. Coat chicken pieces with flour mixture. Brown chicken in hot oil over medium heat, about 15 minutes, turning to brown. In a saucepan combine catsup, onion, water, garlic, remaining 1 teaspoon salt and pepper. Bring to boiling. Simmer for 20 minutes. Blend in lemon juice; add to chicken. Cover; cook over low heat 35-40 minutes or until tender. Serve with sauce. Serves 4. |
