BUTTERMILK PIE 
1/4 c. flour
1 1/2 c. sugar
1/2 tsp. salt
1/2 c. melted butter
3 eggs, beaten
1 c. buttermilk
1 tsp. vanilla
1 tsp. lemon extract
1 (9 inch) pie shell, unbaked
Ground nutmeg

Sift flour, sugar, and salt together into a mixing bowl; set aside. Combine the melted butter, eggs, and buttermilk; mix with a fork until well blended. Add to the flour mixture; mix well. Stir in vanilla and lemon extract. Pour into the unbaked pie shell and sprinkle with nutmeg, if desired. Bake on the center shell of 350 degree oven for 55 to 60 minutes or until filling is set (knife inserted comes out clean) and lightly browned.
