STUFFED CABBAGE CASSEROLE 
1 med. onion, chopped
3 tbsp. butter
1 lb. ground beef
1 head cabbage, coarsely shredded
1 can tomato soup
3/4 tsp. salt
1/8 tsp. pepper
1 c. rice, uncooked

Saute onion in butter. Add ground beef, salt and pepper; heating through but not browning. Spread half the shredded cabbage in a 2 quart baking dish. Cover with meat mixture and then cover with rice. Top with remaining shredded cabbage. Pour tomato soup over top. Cover and bake 1 hour at 350 degrees.
