APPLESAUCE CAKE 
1 c. solid shortening (softened)
2 c. granulated sugar
1 tsp. salt
2 eggs
1 tsp. allspice
1 tbsp. cinnamon
1 tsp. lemon extract
4 c. flour
1 can applesauce (#2 can)
2 tsp. baking soda (scant)

Prepare tube pan. Grease well and dust with flour. Cream first 7 ingredients. After each addition, beat until fluffy. Pour applesauce in bowl. Add baking soda; mix well. Will foam, soda must be well mixed into applesauce.

Pour applesauce mixture into flour slowly so that no lumps of flour will be left in batter. Add nuts, fruit, raisins (whatever you choose). Bake at 325 degrees for approximately 1 hour, test. Cool before turning out of pan.
