PUMPKIN PUDDING 
2 lb. pumpkin, peeled and cut in pieces
4 c. water
1 tbsp. salt
3 eggs
2 tbsp. butter
1/2 tsp. ground cinnamon
1/3 c. flour
1/3 c. sugar
1/3 c. milk

Preheat oven to 400°F. Grease a 2-quart glass baking dish. Cook pumpkin rapidly in water and salt, covered, for 20 minutes. Drain and put pumpkin through a potato ricer. Add remaining ingredients and mix. Turn mixture into baking dish and bake about 40 minutes.
