PAT'S FAJITAS 
Approx. 1 lb. fajita meat
3/4 c. oil
2 tbsp. red wine vinegar
2 tbsp. minced green onions
1/4 c. honey
1/4 c. soy sauce
1 tsp. ginger
1/2 tsp. garlic powder
Fresh corn tortillas
Salsa
Chopped lettuce
Grated cheese

Trim steak of fat and gristle. Cut into long thin strips and place in a covered dish. Combine vinegar, oil, onions, honey, soy sauce, ginger and garlic powder in lidded jar and shake vigorously. Pour over steak making sure all pieces of meat are submerged in liquid. Let stand 8 to 12 hours in refrigerator. When ready to serve, warm tortillas and prepare bowls of salsa, lettuce and cheese. Cook meat strips over a hot bed of coals or high heat on a gas grill, about 3 minutes on each side. (Meat will really flame when first put on grill.) Serve by placing meat strips in tortillas, accompanies by garnishes. Yield: 4 servings.
