SPINACH FETTUCINI WITH SMOKED
SALMON & DILL
 
6 to 8 scallions, cut into 1/4 inch pieces
1 tbsp. butter
1/3 lb. smoked salmon, cut in 1/2 inch pieces
1 c. light cream
3 tbsp. chopped fresh dill
1/2 lb. spinach fettucini (cook as directed)

Saute scallions in butter 2 to 3 minutes. Lower heat and add salmon and cream. Stir and heat gently 5 minutes. DO NOT BOIL. Add dill and serve immediately over hot pasta. Makes 3 to 4 servings. Quick, easy, elegant! Great for a holiday or special occasion.
