CHILI RELLANO CASSEROLE 
1 (8 oz.) can whole green chili peppers
1/2 lb. Monterey Jack cheese, grated
1/2 lb. cheddar, grated
2 eggs
2 tbsp. flour
1 sm. can tomato sauce
1 lg. can evaporated milk

Open chili peppers and rinse with cold water. Layer in casserole; chili peppers, Jack cheese, cheddar cheese and choice of meat (if desired). Beat eggs, milk and flour. Pour over cheese and chilies. Bake at 350 degrees for 30 minutes. Remove from oven and pour tomato sauce over top and prick with fork. Return to oven for 15 minutes, then let stand for 15 minutes.

Optional meat can be: cooked chicken, turkey, cooked hamburger meat and etc.
