RED PEPPER BROCHETTE 
1 (12 oz.) jar roasted red peppers, drained and finely chopped
1/2 c. finely chopped tomatoes (discard seeds)
1/4 c. finely chopped purple onion
2 tbsp. balsamic vinegar
2 tbsp. olive oil
1/2 tsp. salt
1/2 tsp. pepper
dash of sugar
1 baguette
1/4 c. olive oil
1/2 c. garlic herb Feta cheese

Mix together red peppers, tomatoes and purple onion; set aside. Mix vinegar, 2 tablespoons olive oil, salt, pepper and sugar. Pour over pepper mixture. Toss and chill. Slice baguette. Brush bread with 1/4 cup olive oil.

Bake at 400°F for 4 minutes. Spoon tomato mixture on top. Place Feta cheese on top. Broil 3 minutes or until bubbly.

I also added a little fresh basil before baking to give it more of a Mediterranean taste.
