SPINACH AND FRUIT SALAD 
3 tbsp. vegetable oil
3 tbsp. red wine vinegar
2 tbsp. sugar
3 tbsp. orange juice
1/4 tsp. dry mustard
1/3 tsp. poppy seed
1/2 tsp. orange rind
1 to 1 1/2 c. strawberries, sliced
1/2 lb. spinach
2/3 c. mandarin oranges
2 chicken breast, cooked and diced

Mix the first seven ingredients. Marinate the strawberries in the mixture for 2 hours in the refrigerator. At serving time, toss in torn spinach, mandarin oranges and chicken. Serve cold. Serves 4 to 6.
