CHICKEN BROCCOLI ROMANO 
2 lb. boneless chicken breast, in 1 inch cubes
1 lb. ziti
3 tbsp. diced shallots
3 tbsp. fresh minced garlic
6 oz. extra virgin olive oil
2 c. dry white wine
3 oz. fresh grated Romano cheese
1 head fresh broccoli tips
1 sweet red pepper, diced
Salt and pepper
2 tbsp. minced basil

Cook ziti and place in oil coated deep casserole. Saute olive oil, garlic and shallots until light, golden brown. Add wine, simmer for 10 minutes. Add chicken and cook until done. Place cooked chicken on top of ziti. Saute broccoli and red pepper until tender, but crisp (about 5 minutes). Pour vegetables and sauce over chicken. Sprinkle lightly with Romano cheese. Salt and pepper to taste. Cover and heat in preheated 350 degree oven for 15 to 20 minutes.
