MANDARIN CHICKEN AND VEGETABLES 
1 or 2 chicken breasts (skinned and boned)
1/2 c. fresh broccoli (cut into bite-size flowerets and stalks into thin slices)
1 carrot (julienned)
1 onion (sliced)
1 red or green bell pepper (chunked)
1/3 c. Kikkomon stir-fry sauce
Several sliced mushrooms

Heat 2 to 3 teaspoon vegetable oil in wok or large skillet over high heat. Add chicken. Stir fry 1 minute. Add vegetables. Stir fry 4 minutes. Add Kikkoman stir-fry sauce. Cook and stir ONLY until vegetables are coated with sauce. Serve immediately over rice.

Note: Start rice cooking first. Preparation and stir fry should take about same time as rice to cook.

Variation: Use thinly sliced beef or pork instead of chicken!
