MARINATED MUSHROOMS 
1 box mushrooms
1 c. vegetable oil
4 tbsp. red wine vinegar
1 tsp. salt
1 tsp. pepper
4 cloves garlic
1 tsp. parsley
1/8 tsp. thyme
1/8 tsp. tarragon

Clean mushrooms, drain. If small, leave mushrooms whole; if large, quarter them. Mix remaining ingredients; add mushrooms and chill. Mushrooms are better if allowed to marinate a couple of days before serving.
